Thai Lettuce Wraps
- 4 teaspoons hoisin sauce
- 4 (9 inch) whole wheat wraps, about 2 ounces each
- 4 large Boston lettuce leaves (about 1 head)
- 12 ounces shredded chicken from rotisserie chicken
- 2 apples, cored and thinly sliced
- 1/2 cup shredded carrot
- 1/4 cup peanut sauce
Spread 1 teaspoon hoisin sauce on each wrap. Place a lettuce leaf on half of each wrap. Cover with 3 ounces chicken, apple slices and 2 tablespoons shredded carrot. Drizzle with 1 tablespoon peanut sauce. Roll up. Repeat with the remaining ingredients.
Serve with additional peanut sauce, if desired.
